How to make Eggplant Potato Curry

Grind green chillies and ginger coarsely
To make Brinjal Potato Curry, put 2 inches ginger and 3 green chillies in a mortar and grind them coarsely.

Cook the Masala
Now put 2 teaspoons of Desi Ghee in a pressure cooker. When the ghee is hot, add 1 teaspoon of cumin seeds and the coarse chilli-ginger paste that we have made, in the cooker. Now cook it a little while stirring it.

Cook the Tomatoes
After this, add 3 chopped tomatoes in the cooker and cook the tomatoes on high flame for 1 to 2 minutes.

Add Brinjal, Potato and Malaise
Once the tomatoes are cooked properly, cook them in the pressure cooker
- 400 grams of eggplant, chopped
- 4 potatoes, chopped
- Salt to taste
- 1/2 teaspoon turmeric powder
- 2 teaspoon Kashmiri red chilli powder
- 1 tablespoon coriander powder
Now mix all these spices well with the potatoes and eggplant.

Add water
When all the spices are mixed well, add 1 cup water to it, mix all the things and close the lid of the cooker.

Cook till 1 whistle
After putting the lid on the cooker, let it cook on medium flame until one whistle comes. When one whistle comes, turn off the gas and let all the air in the cooker escape on its own.

Cook for 2 to 3 minutes more
Now remove the lid of the cooker and turn on the gas, now cook it till the water of the potatoes and brinjal dries up completely, when the water dries up, add a pinch of garam masala, a handful of fresh green coriander, if you feel that there is less salt in it then add salt as per your taste and after this cook for 1 more minute and turn off the gas.
